She used to serve this at Christmas and/or any other special occasion. It was one of her favorites. I have the hand written copy – apparently she gave me this recipe in the ‘70’s.
- 1 large can Leisure peas.
- 1 can French Style Green Beans
- 1 cup chopped Green Pepper
- ½ cup chopped Onion
- 1 cup chopped Celery
- ¾ cup Vinegar (recipe doesn’t say whether she used white or apple vinegar)
- 1 cup Sugar
- 1Tablespoon water
- ½ cup oil (I’ll use EVO)
Drain all liquid from peas, beans and corn. Let stand in refrigerator over night. Good for days.
My Mother, W. loved to entertain family anytime, especially on holidays; this was one of her favorites and a standby, especially at Christmas when she used both green and red peppers.
