This is an old recipe. Mom has been making these for as long I can remember. It's your basic bell pepper stuffed with a beef and rice mixture. Using some of the other colored peppers available these days is a great way to make a colorful dish.Ingredients:
- 1 - 2 large green peppers
- 1 package good hamburger (ground sirloin)
- Grated cheddar cheese
- 1 ½ cups rice
- 2 cans tomato sauce
- Chili Powder
- Salt and Pepper to taste
Wash green pepper; cut crosswise into about 3-4 rings, remove white seeds etc., from inside pepper ring. Put in pan of water, bring to boil for about 2 minutes - slightly tender
Place 1-½ cups rice in 3 cups water in a large bowl w/cover in microwave, for @14 minutes stirring once or twice while cooking.
Brown hamburger meat with ½ small onion in large deep sided pan;
Mix cooked rice, hamburger and tomato sauce together; add Chili power, salt and pepper to taste. Stir well.
Pour mixture into large buttered casserole dish; arrange pepper rings on top and push down into mixture. Bake for about 20 minutes @ 350 degrees add grated cheese on top. Bake again until cheese is melted.
